Berry-Buckwheat-Mousse

Hey there :) As the weather is getting warmer and the sun shows its face more often I felt like something refreshing. And berries totally do the deal for me. They are sweet but not so sweet that you taste nothing but sugar. They contain a lot of water, perfect for those warm days. And they just have all those nice colors that make you feel like living in Barbie-Land ;) Okay, maybe Barbie hasn’t much to with it. But anyways, berries really rock. They are so little yet so versatile in usage and perfect if you want to feel like summer’s coming. Yup. No winter in the berry-territory, so no worries also. Just some nice nutritious little friends :) Most berries are high in vitamin C (and depending of the berry, a lot of other vitamins too of course) and a good source of fiber. They are also comparably low on the glycemic scale, meaning you won’t get a sugar rush and afterwards some sort of down. Instead it’ll be a slower and more constant release. They also contain a fair amount of polyphenols and antioxidants. Those are the little guy fighting free radicals, so hooray :)

Recipe

prep time: 10 mintues +++ serves: one

Ingredients

  • 1/3 Cup buckwheat groats
  • 1 banana
  • ½ apple
  • 1/3 Cup mixed berries, preferably frozen (raspberries, blueberries, strawberries, blackberries etc.)
  • ¼ Cup almond milk
  • 1 Tbsp. lemon juice
  • 1 tsp. maca powder

  Instructions The night before soak the buckwheat groats in water The next morning drain and rinse the buckwheat. Put aside about 1-2 tbsp. Place the rest of the buckwheat in a blender, add the banana, half an apple, a tbsp. maca powder and the almond milk. Blend until smooth. Take out about ¼ Cup of the mixture and put it into a small bowl or glass. Then add the berries and the lemon juice to the rest and blend again until smooth again. Put the berry-mixture over the banana-apple-mixture. Place the reserved buckwheat groats over the mousse and stir in if you want to.
